During the holiday season, if there is something that I especially crave, it’s breakfast food. There’s something about waking up on a cold morning and making a scrumptious breakfast from scratch in the kitchen. Now, most mornings I am running around like crazy and trying to sling coffee to my husband like a bartender as he is running out the door to work so it’s not as charming as it seems BUT there are many weekend mornings that I can get up a tad later than usual and get my cooking going like a champ!
Right now, I am just on this pancake kick. I think it reminds me of my childhood during the holidays when we would wake up to our Grandmother cooking pancakes from scratch with the most delicious syrup. The smell takes me back almost to a different time and I have been experimenting with different recipes that she would have loved to try. I stumbled upon this amazing recipe by my friends at Stonyfield and this is hands down – my new favorite pancake recipe! Try these Stonyfield Banana Pecan Pancakes !
Topped with Bananas and pecans, these pancakes are thick with a nice crunchy edge to soak up all that sweet maple syrup. For this recipe, I used King Arthur 100% Organic Whole Wheat flour and found that it makes a better tasting pancake with a bit more dense flavor. The wheat really makes this recipe filling and almost cake like! King Arthur is always my go to flour that I use when baking or cooking recipes.
